Grape variety 100% Montepulciano from vineyards in hilly areas of Tollo indicated in cadastral map n.1 of Località Sterpari, n.2 of Località Piane Mozzone and Colle Cavalieri, n.12 of Località Colle Secco.
Soils type They vary according to the different vines, from those to medium texture and slightly calcareous, to those marly-sandy, permeable and not very deep with a skeleton grain.

Drying Maceration of the skins in 3-kg boxes in a ventilated place at controlled temperature and humidity for a period of 4 to 6 months.

Ageing process For 18 months in inox tanks (90%) and in French durmast casks (10%).
