Vinification process After pressing, the grapes from certified organic vineyards remain in contact with the skins in cement tanks for a long period of maceration. The fermentation of pressed grapes takes place with spontaneous natural yeasts.
Ageing process In a tank with a cavity, the sediments of the yeasts naturally stabilize and increasing the olfactory complexity of the wine. The product is bottled without being filtered nor stabilized.

Vinification process The grapes from certified organic vineyards, after a short cryomaceration, are subjected to soft pressin. The must ferments in 225 litres French oak barrels and Austrian acacia used for the third time at continuously controlled temperature. Then some lees dynamic stirring operations follow.
Ageing process In the same fermentation barrels so that the yeast sediments are always in contact with the wine enhancing its aromatic richness.
