Research

Research

Even when it comes to innovative wines, the source of inspiration is still our territory, which we like to reinterpret wisely. This is the case of InAnfora, where we retraced and brought back to renewed life the ancient Romans’ winemaking method. With Casadonna, on the other hand, we decided to support 'extreme viticulture', bringing Pecorino to high altitudes.

Inanfora Pecorino Tullum Docg Biologico

InAnfora Pecorino Tullum DOCG Biologico recalls the ancient Roman tradition of winemaking in amphorae, a practice that has been present for centuries in the territory of Tullum, as evidenced by the dolia, the wine cellars, and the remains of an imperial-era rural villa now housed in the Museum of the Roman Villa.

Inanfora Rosso Tullum Docg

The appeal of history through the discovery of ancient Roman amphorae in our sites has led us to retrace this ancient method of vinification already mentioned in the texts of Pliny.
We wanted to follow an authentic winemaking system, with minimal intervention and using only small amounts of sulfites as it was in the tradition of the ancient Romans to stabilize their wines.

At the beginning there is always a legend, a story or a tale, handed down from generation to generation, over the years, now wrapped in the bark of time. Wines born from traditional gestures will always have something profound to express. Sincere gestures, repeated over the centuries, engraved over millennia, but still relevant and imbued with vitality.

Spontaneous fermentation

We rely exclusively on spontaneous fermentation for all our Premium organic wines: that is the result of the natural selection of so-called "indigenous yeasts", which are responsible for the alcoholic fermentation of the wine. The various yeast species in the fermenting must resist the progressively accumulated ethanol in different ways. The purity of such winemaking art is completed by very little interventions in the cellar and no filtration.

Rosso Biologico Tullum Docg

An exceptional red wine from organic grapes, spontaneous fermentation, without filtration.

Location

Tollo municipality

Grape variety

From certified organic vineyards cultivated on hilly terrain in the municipality of Tollo, in conformity with regulations

Harvest

Mid-October (based on chemical analysis and grape tasting)

Vinification

After pressing, the grapes remain in contact with the skins inside concrete tanks for a long period of maceration. Fermentation of the crushed grapes is carried out by indigenous yeasts naturally present on the grapes. Complete and spontaneous malolactic fermentation

Refinement

Refinement takes place in the racking tank so that the yeast sediments are in contact with the wine, stabilising it naturally and increasing its olfactory complexity. The product is bottled without filtration and stabilisation

Alcohol

13,5%

Colour

Intense ruby red

Fragrance

Red cherry, bramble, blueberry, liquorice, violet and tobacco

Taste

Juicy fruit and fresh acidity. Solid and grainy tannins. Medium-bodied with a fresh and persistent finish

This is followed by rotary-dynamic batonnage operations
